A recipe from Mike (Chief DD) – Darlinghurst
I know Kale has been on its comeback now for a few years but I still love it. It has such a balanced flavour that it goes with most things. I love stir fried kale with omelettes or as a side to a delicious eye fillet steak.
I’ve just whipped up a quick stir-fry. There is no trick to this, it’s pretty much whatever vegeatables you have at home, and I also added 250 grams of red quinoa, – great rice substitute. Tonight I used:
- Brocolini (blanched)
- Snap peas (blanched)
- Carrot (blanched)
- Green Capsicum
- Red quinoa
A swirl of olive oil in a hot pan, add your ingredients and a little salt and pepper and you’re on your way. Remember not to overcook of course. A little crunch goes a long way to a healthy meal.
