Sesame green beans

A recipe from Kat – Surry Hills

I love beans… Particularly when they still have a bit of crunch to them.

This is a Chinese inspired dish which is tasty, veggie and very simple to make.

200g green beans, topped and tailed
2 tsps. sesame seeds

Dressing –
1 clove garlic, crushed
2 tbsps. mirin
2 tbsps. light soy
2 tbsps. rice wine vinegar
2 tbsps. sesame oil

Place all the dressing ingredients in a bowl and mix well.
Place a dry fry pan over medium heat. Add the sesame seeds and toss occasionally for around 4 minutes or until they change colour. Keep a close eye on them as they can burn very quickly.
Bring a pot of salted water to the boil and blanch the beans for 2 minutes. Drain.
Toss the beans in the dressing, sprinkle over the toasted sesame seeds and serve.
