A recipe from Kat – Surry Hills
This is a recipe which was given to me by my mum and I find that I am always being asked for it.
Ingredients
1 cup rolled oats
3/4 cup coconut
1 cup plain flour
1 cup sugar
2 tablespoons boiling water
1&1/2 teaspoons bicarb soda
125g butter
1 tablespoon golden syrup
Method
Combine the rolled oats, flour, sugar and coconut in a bowl – mix well.
Heat the golden syrup and butter in a pot on the stove on a low heat until the butter melts. Mix the bicarb into the boiling water and give a quick stir to dissolve.
Add the bicarb to the golden syrup and butter mixture. It will froth up. Stir the wet mix into the dry.
Spoon heaped teaspoons of the mix, roll into balls and pop onto trays and squish down a bit with a fork.
Bake at 150 degrees for about 20 minutes.
*If you like them extra chewy add extra syrup into the butter mix.
